Where it comes from
The territory of origin is the stony Plateau de la Crau, located in the south-east sector of Châteauneuf-du-Pape, between Bédarrides, Châteauneuf-du-Pape and Courthézon. The soil rests on a deep matrix of Miocene molasse and dense layers of clay, entirely covered by the famous rounded pebbles of Alpine origin, known as galets roulés. This synergy between the surface stony deposits and the clay subsoil positively influences the structure and elegance of the wine.
How it is produced
The rigorous production begins in the vineyard with a meticulous hand-harvest, followed in the cellar by selective destemming and a gentle pressing of the grapes. The traditional fermentation lasts between 25 and 40 days and takes place partly in temperature-controlled stainless steel tanks and partly in wooden vats, before concluding with pneumatic pressing and malolactic fermentation. The final structure of the wine is enriched thanks to a long maturation of 20-22 months in large French oak barrels, a process that defines its structure.
