Where it comes from
This red originates in Erbusco, in the heart of Franciacorta, Lombardy, and belongs to the Sebino denomination. It is produced by Ca’ del Bosco, a winery founded in the mid-1960s and now an absolute benchmark for the region. The soils of Brescia give the Merlot grapes a distinctly aromatic character that is immediately recognisable from the very first sip. The geographical identity of the area ensures a rigorous balance of flavour and a consistently defined structure, capable of enhancing the climatic peculiarities and richness of the local soils.
How it is produced
After a rigorous manual selection in the vineyard, the bunches are destemmed and crushed, with the musts transferred by gravity. The temperature-controlled fermentation lasts eleven days and is followed by a post-fermentation maceration, for a total cycle of twenty-five days. After racking, the wine undergoes malolactic fermentation in small oak barrels, mostly new. A careful ten-month maturation helps to soften the tannic texture and define the aromatic profile in perfect overall harmony.
