What type of wine it is
Castellaro Suavia is an organic white wine from the Veneto region, specifically the Soave Classico area, fermented and aged in steel. Produced exclusively from Garganega grapes, it appears in the glass with a bright straw-yellow colour. The olfactory profile reveals clear hints of jasmine and lemon zest, intertwined with a delicate spiciness of white pepper. On the palate, the style reveals itself as dry, taut, and energetic, guided by a crystalline freshness that accompanies the sip towards a savoury finish with a marked mineral character.
Where it comes from
The grapes ripen in Fittà di Soave, in the heart of Soave Classico, within a small north-facing vineyard along the ridge of Monte Castellaro. The rows are located at about two hundred and twenty metres above sea level, in a climatic context tempered by the Lessini Mountains. The old vines, trained using the Veronese pergola system, sink their roots into a soil of volcanic matrix. This terrain, consisting of weathered basalts and rich in rock fragments, has an extremely stony texture that gives the wine a distinctive gustatory energy.
How it is produced
The manual harvest takes place in mid-October. The must ferments in temperature-controlled steel tanks, avoiding malolactic fermentation to preserve maximum aromatic vivacity. Maturation continues for twelve months on the fine lees, also in steel, an essential technique to promote roundness while keeping the gustatory tension intact. After careful ageing and a single membrane filtration, the result is a white wine with a precise texture. At the table, its marked savouriness ideally accompanies fish dishes, sushi, and aged cheeses.

It originates in Fittà from a tiny vineyard, where historic fifty-year-old Garganega vines thrive on basaltic volcanic rocks. The winemaking, led by Valentina Tessari, excludes malolactic fermentation to enhance its vibrant energy. Meticulous ageing in steel for twelve months on the fine lees, followed by two years of rest in the bottle, forges a taut white wine, celebrated with 95 James Suckling points for its exceptional minerality.

Our family has been living and cultivating the land since the nineteenth century in Fittà: a small rural village mounted like a precious stone on the hills of Soave Classico. The history of Suavia however began later, in 1982, when Giovanni and Rosetta (the father and mother), aware of the great potential of their area, decided to set up on their own and make their mark, crushing their grapes and making their own wine.
Today we three sisters, Meri, Valentina and Alessandra, carry on the family tradition and run the winery always working here in Fittà, where it all started. Read more
