Description
What type of wine it is
Ottin Canto X Chardonnay from the Ottin winery is a still white wine that precisely expresses the characteristics of Chardonnay grown at high altitudes. This wine, belonging to the Valle d'Aosta Denominazione di Origine Controllata, is structured and complex, distinguishing itself with a marked savoury minerality and a full body. The aromatic profile offers elegant notes of sweet spices, flint and fruit, while on the palate it reveals itself to be fresh, dynamic and with an extremely clean finish. Vinification involves the full completion of malolactic fermentation and prolonged ageing in French oak barrels, techniques that bestow great structural balance to every sip.
Where it comes from
The grapes destined for this label come from the steep slopes of the Aosta Valley, cultivated at an altitude between 650 and 700 metres above sea level. The vineyards, all with a privileged southern exposure, enjoy a harsh Alpine climate and take root in morainic and sandy soils. This specific geological and climatic makeup gives the wine its typical freshness and high aromatic definition. The name of the product evokes a precise historical episode linked to Dante's Inferno, recalling the courageous purchase of precious ecclesiastical lands by the original owner, an action considered so extreme that it cost him excommunication.
How it is produced
The production process begins around mid-September with a careful manual harvest of the bunches. Once transported to the cellar, the grapes undergo a soft whole-bunch pressing in order to extract only the purest and most delicate must. Alcoholic fermentation takes place using selected yeasts in oak barrels, followed immediately by the full completion of malolactic fermentation, an essential step to soften and harmonise the entire organoleptic profile. To conclude, the wine undergoes a slow ageing period of one year on the fine lees in French oak barrels, a crucial phase that significantly enriches its structure.
