Cabochon Franciacorta Brut represents one of Monte Rossa's most refined expressions. This wine, produced according to the Metodo Classico (Traditional Method), is born from a harmonious blend that combines Chardonnay with Pinot Noir, bringing together wines from historic crus with a precious selection of reserve wines. To the eye, it presents a straw-yellow colour, enhanced by a very fine and persistent perlage. On the nose, clear notes of white flowers, ripe yellow fruit and delicate hints of chamomile emerge. On the palate, it stands out for its deep and complex style, characterised by good minerality and an elegant persistence.
Where it comes from
The vineyards are situated on the hills of Franciacorta, specifically in the Bornato area. Here, Monte Rossa's roots run deep into glacial moraine soils, which give the wine a taut structure and a well-defined mineral identity. Proximity to Lake Iseo ensures a breezy microclimate, the result of constant thermal exchanges between the water and the surrounding plain. The vines, grown using Guyot and spurred cordon training systems, maintain an ideal balance, allowing for exceptionally high-quality grapes that faithfully reflect the terroir of origin.
How it is produced
The production process begins with the manual harvesting of the clusters, selected to guarantee total integrity. Through gentle pressing, only the free-run must is extracted, the most noble part of the grape. Each cru is vinified individually to preserve its unique characteristics. The first fermentation takes place in oak barrels, a fundamental technical choice to enrich the wine's structure and complexity. Following the creation of the blend, secondary fermentation in the bottle begins, as required by the Metodo Classico. A long ageing on the lees for over 40 months gives the wine remarkable aromatic breadth, concluding the tasting with a persistent finish and the typical toasted notes of a high-level Brut.

The history of Monte Rossa is starred by strategically winning decisions such as being first to abandon still wines to search for excellence in Franciacorta, or the determination to invest in technology, or again the continuous research and experimentation distinguishing this winery.
Today the Monte Rossa Company manages 70 hectars of vineyards. The different locations of cru on plots with different exposition contribute to increase the aromatic richness of grapes in such a way to make up very rich cuvée under the frame and complexity aspect.
