Origin
The roots of this wine are found in the territory of Santa Marina di Salina, in the heart of the Aeolian Islands. The vineyards are located at an altitude between fifty and one hundred metres, on steep volcanic soils rich in pumice, organic matter, and mineral elements. The significant slopes, which reach nearly thirty-five per cent, influence the wine's flavour development, giving it a distinct saline character. The interaction between the island climate and the constant influence of sea breezes defines the bold and vibrant expression of this label.
Production process
Production begins at the end of August with a meticulous harvest, followed by rapid transport to the cellar. The grapes are immediately drained, a technical choice aimed at preserving the maximum aromatic purity of the varieties. To keep the gustatory tension intact, fermentation and subsequent ageing in stainless steel last for six months. The evolution concludes with a further three months in the bottle, an essential step to harmonise the lively fruity notes with the deep brackish vein, ensuring a persistent and balanced sip.
