Doro Princic's Collio Pinot Bianco is a still white wine with a clear straw-yellow colour, an authentic expression of the Collio Denominazione di Origine Controllata (DOC) in Friuli-Venezia Giulia. The aromatic profile is distinguished by a clear olfactory definition, characterised by fragrant floral notes of hawthorn and fruity hints of white peach. On the palate, the sip is intense, harmonious and enveloping, guided by a vibrant minerality and a marked savoury character. The vinification and ageing in stainless steel tanks result in a wine of excellent structure, capable of offering a remarkable persistence that enhances the natural qualities of the variety.
Where it comes from
This wine is born in Pradis, in the municipality of Cormòns, among the picturesque hills of the Collio Goriziano in Friuli-Venezia Giulia. Doro Princic's vineyards are cultivated using the Guyot training system, which ensures balanced vegetative growth. The area benefits from unique pedoclimatic conditions, characterised by the presence of Friulian ponca, a soil composed of layers of marl and sandstone. This specific soil matrix is reflected directly in the glass, giving the Pinot Bianco its unmistakable savoury tension and a clear mineral imprint.
How it is produced
The process begins with a rigorous manual harvesting of the clusters, followed by a soft pressing to extract perfectly clean musts. Fermentation takes place at a controlled temperature in stainless steel tanks, with the help of selected yeasts to outline the maximum precision of the aromas. The entire ageing cycle in steel excludes any passage through barrels, allowing the original freshness of the fruit to remain intact. The process results in a gustatory dynamic centred on the purity of the Pinot Bianco.
