What kind of wine it is
Zymé Valpolicella Reverie is a still red wine from Veneto that authentically expresses the characteristics of its region. This blend is created from the union of Corvina, Rondinella, Corvinone, Molinara and Oseleta grapes, cultivated to enhance the fragrance of the fruit. In the glass, it appears a pale red colour with lively violet highlights. The aromatic bouquet is fresh and evokes hints of dog rose, cherry and morello cherry, accompanied by a delicate peppery note. On the palate, it reveals a savoury and juicy drink, characterised by a light and smooth body enriched with pleasant accents of strawberry and raspberry.
Where it comes from
The grapes ripen in vineyards located in San Pietro in Cariano, in the heart of Valpolicella. The soils are distinguished by a calcareous and clayey composition, a natural element that gives the sip a precise and defined flavour profile. The Zymé winery manages the land following organic and eco-sustainable practices, paying the utmost attention to environmental protection. In the vineyard, organic fertilisers are used, along with careful selection of shoots, leaf thinning and cluster thinning. This agronomic approach ensures optimal ripening of the grapes, faithfully reflecting the identity of the area of origin.
How it is produced
The process begins with a manual harvest carried out between the end of September and the beginning of October. In the winery, the bunches undergo destemming and cryomaceration to delicately extract the aromatic precursors. This is followed by fermentation at a controlled temperature and malolactic fermentation. Ageing takes place in stainless steel tanks for about six months, a technical choice aimed at preserving the freshness of the fruit. This agile structure makes the wine extremely versatile, ideal to pair with aperitifs, cured meats, fresh cheeses and light meats.

This approach stands for a simple style of living in harmony with the earth, in a historical moment in which people, bewildered by the opulence of fake well-being, have put at risk their own survival.
