What kind of wine it is
Zyme Kairos is a still red wine from Veneto, the result of a refined blend of fifteen grape varieties, including Cabernet Franc, Cabernet Sauvignon, Corvina, Merlot, Oseleta, Sangiovese and Chardonnay. This robust red expresses an enveloping sensory profile: on the nose, distinct fruity notes alternate with delicate floral hints and a clear mineral imprint. The palate reveals a pleasant depth, merging flavours of jam and undergrowth with warm nuances of tobacco, cinnamon and nutmeg. The finish is characterised by its lingering taste, making it the ideal companion for flavourful meats, game and mature cheeses.
Where it comes from
Kairos originates from the vineyards of the Zyme winery, located between the provinces of Verona and Vicenza. The soils of alluvial, volcanic and glacial origin vary depending on the location of the plots, giving the grapes a pronounced minerality. This pedoclimatic variety allows for a careful balance between the fruity and floral components. Thanks to strict organic vineyard management, the vines follow their natural rhythms, ensuring the creation of a red wine with a defined identity and a characteristic brilliant ruby colour with garnet highlights.
How it is produced
The production process involves manual pruning, leaf removal and careful selection of the bunches, which are placed on racks for drying for about forty days. Vinification takes place in steel and cement tanks through cryo-maceration. Fermentation, carried out exclusively by indigenous yeasts, lasts for about three weeks and is supported by periodic manual processing of the must. The wine then matures for at least two years in French oak barrels without racking, completing the process with a final period of ageing that definitively consolidates its structural complexity.

This new idea has the purpose of establishing a new relationship between the environment and people as the natural guardian of their local corner of the earth. People are those who protect the environment, but also the ones who can renew it, and reinterpret it.
Ecosustainability to vineyard management practices, transparency of the final product through the understanding of its production processes, and respect for the rhythms of nature are the principles of Zýmē’s approach to winemaking.
This approach stands for a simple style of living in harmony with the earth, in a historical moment in which people, bewildered by the opulence of fake well-being, have put at risk their own survival.
Tradition and innovation are the two complementary features of Zýmē’s wine production. The respect for, and attention to the historic wines of the Valpolicella area accompany innovation and experimentation with new wines that will enhance and renew the local background.
