Zorzettig's Optimum Brut Ribolla Gialla Spumante is a quality sparkling wine from Friuli-Venezia Giulia, made from Ribolla Gialla grapes. Vinified using the Charmat method, it presents a pale straw yellow colour, a fine and persistent perlage, and a bouquet of Golden Delicious apple, white peach, broom flowers and bread crust. On the palate, it is distinguished by a crisp elegance and a lively acidity, proving ideal as an aperitif or to enhance lean fish dishes, tartare and cheeses.
Origin
The grapes come from the prestigious vineyards of Spessa, in the heart of Friuli-Venezia Giulia. Situated at an altitude of 220 metres, the rows enjoy optimal exposure and a Mediterranean climate, cooled by currents from the Julian Alps and tempered by breezes from the Adriatic. This combination promotes a gradual ripening, preserving excellent gustatory tension. The roots reach deep into the ponca, a typical soil composed of marl and sandstone of Eocene origin. This particular geology is fundamental to giving the bunches a profound aromatic freshness, reflecting an authentic territorial identity.
Production
Production begins in September with a rigorous manual harvest. A twelve-hour cold maceration allows for the optimal extraction of the aromatic profile. After the first fermentation in steel, the secondary fermentation takes place in an autoclave according to the Charmat method. To acquire structure and longevity, the wine undergoes ageing on the lees for nine months, enriched by periodic bâtonnage in steel tanks. A final period of resting in the bottle stabilises the organoleptic qualities, ensuring a lively bubble, a slender texture and a dynamic, snappy gustatory progression.

Despite having over a century, the Zorzettig Winery has been continuously renewed both in the vineyard, improving the attention for environmental respect and with the redevelopment of native vineyards, both in production and bottling techniques.
