Zárate Espadeiro is a still red wine produced by Zárate, originating from the Rías Baixas region. Made from Espadeiro grapes, it is a true oenological rarity in an area renowned for its great white wines. On the nose, it offers clear aromas of candied fruit combined with hints of coffee grounds. On the palate, it reveals a structured body, with youthful tannins leading to a dry finish, accompanied by a delicate sensation of sweetness.
Where it comes from
This red is born in the Salnés Valley, in Galicia, from vineyards situated fifty metres above sea level. The grapes come from century-old vines grown on their own roots, with a planting density designed to favour the best expression of the plant. These natural conditions enhance the unique characteristics of the area, giving the wine a high aromatic concentration and a distinct varietal character.
How it is produced
Manual harvesting precedes destemming and subsequent fermentation in stainless steel vats, a technical choice aimed at preserving the clarity of the fruit. Maturation takes place in two stages: twelve months in French oak barrels to acquire the right structure, followed by a period of rest in glass, completing a total ageing of twenty-four months. Bottled without filtration, this wine pairs perfectly with fish stews and oriental cuisine dishes.
