Where it comes from
This wine has its roots in the renowned Jerez-Xérès-Sherry denomination, an Andalusian region with a strong winemaking tradition. The grapes are grown in the prestigious Pago Balbaína, a cru in the Jerez Superior area that imparts a deep aromatic character to the bunches. Production is overseen by Williams & Humbert, a winery founded in Jerez de la Frontera in 1877. Its connection to this unique terroir results in a structured expression, closely linked to historic local practices and the unmistakable microclimate of the province of Cádiz.
How it is produced
The process begins with sun-drying the bunches on the almijar, allowing the aromas to concentrate naturally. After gentle pressing and cold settling, the must undergoes fermentation and targeted fortification with fine distillates. The wine then rests in American oak casks using the famous dynamic Criaderas y Solera system. The lengthy process includes a biological phase under a layer of yeast, before evolving in the criaderas with slow natural oxidative ageing. This maturation brings the wine to the solera, developing a complex and captivating sensory profile.

Sherry is a laborious and sophisticated wine; fallen into oblivion for years, has never really lost its value as a wine of excellence so much that lately the spotlights are rekindling on this truly unique product.
The plants of the Bodegas Williamas & Humbert, considered the largest in Europe, are made up of a complex of connected buildings that occupy an area of about 180,000 square meters. The products of Bodegas combine tradition and know-how acquired over the centuries and expressed by the quality of its prestigious labels. The winery still retains wines and brandy that date back to the time of its foundation and obtained the National Architecture Award.
The vineyards belonging to the company are located in the triangle formed by Jerez de la Frontera, Puerto di Santa Maria and Sanlucar di Barrameda, an area that enjoys a particular and favourable microclimate due to the presence of the Guadalquivir and Guadalete rivers.
On the global scene, Williams & Humbert is developing an ambitious program of diversification of the high quality agri-food sector. Among the most innovative projects, there are the Rum Dos Maderas that are made and partially aged in the Caribbean, and then transferred to Jerez where they end up maturing.
