The Graacher Domprobst Riesling Spätlese by Willi Schaefer is a semi-aromatic white wine that expresses the most authentic soul of German Riesling. This label harmonises a measured sweetness with vibrant acidity, offering a light, lively and well-defined sip. On the nose, there are clear mineral notes and complex fruity aromas. On the palate, the elegance of the terroir translates into a persistent taste, characterised by a long finish recalling plum and blackcurrant, ideal for pairing with smoked fish, white meats and cheeses.

Where it comes from

The grapes grow in the Graacher Domprobst vineyard, located in the heart of the Mosel. The very steep slopes of this area give the wine a unique and profound territorial identity. The Willi Schaefer winery, a historic wine producer since 1590, is dedicated exclusively to Riesling, also passionately tending the prized parcels of Himmelreich and Wehlener Sonnenuhr. The specific soil composition imparts a pronounced minerality, which blends with the fruity profile, ensuring the wine an extraordinary ageing potential.

How it is produced

The winemaking process follows the philosophy of late harvesting, characteristic of the Spätlese style, with grapes picked at perfect ripeness. Fermentation occurs spontaneously using indigenous yeasts, to preserve the purity and varietal nuances of the Riesling. Ageing takes place in large traditional wooden barrels, which encourage slow maturation and a harmonious evolution of the bouquet. The estate is located in the commune of Bernkasel-Graach in the Mosel wine-growing region in Germany. It is owned by Willi e Christoph Schaefer. The vineyard area totals three hectares, with holdings in the top-rated Graacher Domprobst and Himmelreich sites, as well as in the Wehlener Sonnenuhr site. The area is planted exclusively with Riesling. Most of the wines are fermented with natural yeasts in traditional 1000-litre oak barrels, and then matured in these same barrels.
