Description
What kind of wine it is
Vouette et Sorbée's Extrait Brut Nature Champagne is a Traditional Method wine crafted from a refined blend of Pinot Noir and Chardonnay. In the glass, it displays a pale gold colour, enhanced by a fine and persistent perlage. On the nose, it reveals a complex bouquet intertwining notes of honey, fresh red fruits and citrus, complemented by hints of dried orange peel. On the palate, it stands out for its vibrant mineral energy, with a dry sip reminiscent of candied orange, enriched by elegant brioche notes and aromatic herbs.
Where it comes from
This wine originates in Buxières-sur-Arce, embodying the most authentic spirit of Champagne. The vines, around twenty years old, sink their roots into Jurassic soils, spread between Kimmeridgian slopes and a Portlandian plateau. Vouette et Sorbée operates according to the principles of organic and biodynamic agriculture, with Demeter certification. The vineyards are cultivated without the use of synthetic chemicals, favouring natural composting and the constant protection of biodiversity.
How it is produced
Production begins with a rigorous manual harvest. The bunches are gently pressed in a vertical chestnut press and the musts are transferred by gravity into traditional barrels, where they ferment spontaneously thanks to the action of indigenous yeasts. After the spring malolactic fermentation, the Traditional Method continues with the remuage and disgorgement phases, carried out entirely by hand. The complete absence of final dosage results in a Brut Nature expression of pure, essential and linear charm.
History and Curiosities
Originating from Buxières-sur-Arce, this Champagne Brut Nature enhances the pure soul of the terroir. The estate, certified by Demeter, protects biodiversity by forgoing any chemical intervention in the vineyard. After a meticulous manual harvest, the grapes are pressed in an ancient vertical chestnut press, with the must transferred by gravity. Spontaneous fermentation using indigenous yeasts in 400-litre barrels gives rise to a non-dosed Champagne with vibrant charm and luminous mineral energy.

The grape variety, currently dominated by Pinot Noirs, is slowly evolving towards more Chardonnay because of our Chablisian proximity: pedology, climate, fauna, flora, density of plantation, internal surface of clays. All the year we are five to work, helped during the shots by some friends, students, brothers-in-law, family and trainees. The culture is very worried, the composts fermented at the end of the vine, the heavy tractor gone, the fruit trees replanted, the cows tamed, in short ... that happiness!
The domain is certified Organic Farming and DEMETER by Quality France since 1998. Nothing chemical, synthetic zero, only life !!! The picking is manual and spread over about 3 weeks. A traditional vertical chestnut provides pressing. From this stage everything is simple: without pumping, the juices are decanted and go down in the barrels of 400 liters, pieces or leaflets ... to the choice. The fermentations are done thanks to the yeasts present on the berry pruine.
The breeding continues until the spring which will naturally start the malolactic fermentations. Then rest the setting, the foam on slats, riddling on desks, disgorging on the fly, finally the dressing. All cellar operations are done by the people who work the vineyards of the estate in order to be fully aware, involved and proud of themselves. Read more
