Where it comes from
The grapes come from the vineyards of Montefusco, located in the hilly area of Irpinia, in Campania, between four hundred and seven hundred metres above sea level. The continental climate ensures marked temperature variations, favouring a slow ripening that preserves the natural freshness of the bunches. The volcanic soils, formed from the disintegration of sandstones, are rich in calcium carbonate, clay and sand. This complex geological matrix gives the wine a pronounced mineral character, lending breadth to the flavour profile and a solid structure.
How it is produced
Vinification begins in October with the manual harvest, carried out at full ripeness. In the winery, gentle crushing and pressing of the whole grapes is followed by static cold clarification of the must. Fermentation takes place at a controlled temperature, with partial malolactic fermentation to harmonise the overall profile. The subsequent ageing in steel for about three months preserves the aromatic clarity, enhancing the freshness and identity of the grape variety.
