How it is produced
Production begins with the manual harvesting of the bunches at optimal ripeness. After gentle crushing and destemming, fermentation takes place at a controlled temperature, supported by regular pump-overs for proper extraction. The wine is then pressed just before dryness to complete malolactic fermentation in tank. This is followed by a twelve-month maturation period in French oak barrels, using a proportion of new wood, a step that imparts subtle spicy notes and shapes an elegant and well-defined structure.
