The roots delve into sandy sandstone soils, responsible for the typical dry and measured character of the sip. How it is produced
Vinification begins with a spontaneous fermentation carried out by indigenous yeasts, a fundamental choice to respect the purity of the grape variety. The wine then ages for eight months in concrete tanks and barrels, integrating the neutrality of the former with the delicate contribution of the wood. This is followed by resting in the bottle for at least six months, an essential stage for harmonising the bouquet and consolidating the structure. Every stage of production reflects the sustainable philosophy that characterises the entire Villa Papiano project.
