Where it comes from
The grapes come from a single terraced vineyard located in Modigliana, on the hills of Emilia-Romagna. The mature vines are grown using the bush vine system at an altitude between 500 and 530 metres, in a temperate climate that encourages optimal aromatic development. The use of biodynamic agriculture respects the characteristics of the sandy soils, composed of a sandstone matrix with clay intrusions. This geological composition gives the wine a marked aromatic precision and perfect balance.
How it is produced
The production process begins with a spontaneous fermentation, activated exclusively by indigenous yeasts. Afterwards, the must undergoes maceration at a controlled temperature in steel containers, useful for extracting colour and polyphenolic substances. Malolactic fermentation takes place in oak barrels, softening the structure before the resting phase. The maturation process continues for twelve months between concrete and large barrels, followed by bottle ageing of at least twenty-four months, essential for harmonising the fruit and spice notes.
