The vineyards are situated on calcareous-clay marl, mineral-rich soils that allow the vines to develop bunches of profound complexity. How it is produced
Production begins with a manual harvest and careful selection of the bunches between late September and mid-October. After crushing and destemming, the must undergoes alcoholic fermentation for a period ranging from ten to twenty days, followed by malolactic fermentation which harmonises its structure. The wine then rests for at least twenty-six months in barriques and in large Slavonian oak casks, a maturation that shapes its classic elegance. If decanted for about an hour, it becomes the ideal companion for red meats and game, braised dishes, stews and mature cheeses.
