The bouquet offers clear notes of violet, blackberry and black cherry, intertwined with refined mineral and woodland nuances. On the palate, it reveals a fruity character enhanced by hints of mint, spices and confectionery, supported by round and elegant tannins. This balance leads to a long and refined finish, ideal for accompanying meat stews, game and selections of mature cheeses.
Where it comes from
This red is born among the hills of the Langhe, from selected parcels located in the renowned Barolo production area. The grapes come from historic vineyards, including Bricco Boschis, Ginestra, Liste and Ravera, which offer complementary interpretations of the grape variety. The agronomic management strictly follows the principles of organic and sustainable viticulture, with a high planting density. The vocation of these lands and the careful selection give the wine a well-defined tannic structure, ensuring an ideal harmony between the pleasantness of the sip and a remarkable capacity for evolution over time.
How it is produced
The Vietti winery adopts rigorous methods, dedicating to this label the same care reserved for its great red wines. The process begins with alcoholic fermentation at a controlled temperature for a period between eighteen and twenty-eight days, followed by malolactic fermentation carried out between steel and barrique. The complex ageing process includes ten months in barrique and a further sixteen months in large casks. A brief rest in steel tanks precedes bottling, perfecting the structured profile of this vegan wine, carefully selected in its third year to ensure maximum elegance.
