On the nose, it releases enveloping and complex aromas, characterised by clear floral notes of rose and intense spicy hints of liquorice, pepper and leather. On the palate, it reveals a robust and austere body, maintaining a structural balance ideal for accompanying braised dishes, red meat stews, game and mature cheeses.
Where it comes from
This wine originates from the Gallina cru, located in the municipality of Neive, an area historically renowned for the production of great reds. The grapes come from old vines over forty years old, where the optimal southern exposure ensures perfect ripening of the bunches. Such conditions are fundamental for obtaining rich and concentrated raw material. The pedoclimatic characteristics of the area give the wine a natural elegance and a marked propensity for long ageing, allowing it to mature beautifully over the decades.
How it is produced
Vinification begins with fermentation in stainless steel tanks at a controlled temperature, with a skin maceration of fifteen to eighteen days. Subsequently, the wine matures for a long period resting in oak barrels from Slavonia and France, a stage that defines its gustatory structure. Further ageing in the bottle completes the production cycle. To fully appreciate its complexity, it is recommended to decant for one hour and serve at a temperature between eighteen and twenty degrees.

At the beginning of the 1980s, he signed his first bottles, personally selecting the grapes from six hectares of vineyard at "Cascina Nuova", a farm located in the heart of the historic Gallina hill, once part of the great wine-growing estate of the Lords of Neive Conti Riccardi Candiani, now owned by Marcarino.
The precious experience acquired over time, research and experimentation in the vineyard and in the cellar, have contributed to making this producer a protagonist of the quality revolution that, in recent years, has led to the emergence of an elitist wine culture.
The conviction that a great wine is born over time and that waiting, managed without anxiety, gives it class, importance and longevity, leads Ugo to place his bottles on the market only after a long and proper rest. Read more
