Description
What kind of wine it is
Champagne Les Cotes Calcaires Nature by Tristan Hyest is an organic zero dosage wine of great precision. The blend combines Chardonnay, Pinot Meunier and Pinot Noir, enhanced through the rigorous use of the Traditional Method. In the glass, it displays a bright golden yellow hue, animated by a fine and persistent perlage. The aromatic profile is clear, characterised by distinct citrus notes that blend with hints of small exotic yellow fruits. On the palate, it is vibrant, rounded and complex, offering a delicate freshness that ensures a satisfying and very smooth sip.
Where it comes from
This wine is produced in Trélou-sur-Marne, in the heart of the Champagne region. The vines take root in limestone soils, a fundamental characteristic that gives the label its name and contributes tension and clarity to the taste. Vineyard work follows the principles of organic and sustainable agriculture, protecting the region's precious viticultural heritage. Tristan Hyest's approach is that of an independent and artisanal winemaker, dedicated to direct and careful management of every agricultural phase. This dedication is reflected in a micro-production that authentically expresses the unique features of its landscape of origin.
How it is produced
The production of this sparkling wine follows the rules of the Traditional Method, enhanced by careful ageing. Part of the wine matures using the Solera method in partially filled barrels, a complex technique that enriches the blend with remarkable flavour layering and consistent stylistic continuity. The ageing on the lees, strictly without the addition of sugars after disgorgement, preserves a clear and defined character. At the table, its freshness makes it an ideal companion for the entire meal. It pairs perfectly with refined selections of shellfish and lean fish, and also enhances seafood starters and platters of delicate cheeses.
History and Curiosities

The elegant cuvée combines Chardonnay, Pinot Meunier and Pinot Noir grapes, blending 67% from the 2019 vintage with 33% of wines aged using the Solera method in partially filled barrels. This complex technique imparts a vibrant elegance to this Pas Dosé (zero dosage), disgorged in December 2022. In 1999 I decided to acquire solid experience.
In 2001, I personally took over the vines and obtained replanting rights. Then, in 2003, with a small holding of 2.5 ha, I decided to get into the development of my own vintages, creating a champagne with a unique style... Read more
