Hexenbichler Schiava from Cantina Tramin is an inviting still red wine from Alto Adige. This blend is made from Schiava grapes, accompanied by Lagrein, Schiava Grigia and Pinot Noir, presenting in the glass with a ruby red colour and a medium body. The aromatic profile develops with clear notes of red fruits, enriched by a typical hint of bitter almond. Where it comes from
The grapes ripen in Termeno, in the Ronchi microzone, where the Hexenbichler vineyard is located. The vines grow on hills at the foot of the mountains, at an altitude between 300 and 450 metres. The area benefits from significant temperature variations: sunny Mediterranean-style days are followed by nights cooled by Alpine currents. The soils, composed of limestone, clay and gravel, provide the ideal base to give savouriness and freshness. In this particular mountain microclimate, Schiava expresses fruity notes and a roundness that give the wine smooth drinkability and a refined structure.
How it is produced
Production begins with a manual harvest, aimed at preserving the integrity of the bunches until destemming. Alcoholic and malolactic fermentation take place at controlled temperatures in stainless steel tanks. Maturation continues with a period in cement vats and subsequent ageing in large oak barrels. This process shapes a dry red, with low residual sugar, that retains the liveliness of the sip. To fully appreciate its harmony, it is recommended to serve at 14-16 °C, allowing the wine time for proper oxygenation before tasting.
