What kind of wine it is
The Cabernet Sauvignon from Cantina Tramin is a dry red wine with controlled designation of origin, fully reflecting the identity of Alto Adige. Distinguished by a garnet red colour, it reveals a fragrant profile of red fruits and spicy nuances. On the palate, it offers an enveloping sip, characterised by a good structure and an excellent balance between fruit and tannic texture. The tasting reveals notes of blackcurrant, green pepper and cedarwood, well integrated thanks to fermentation in steel and subsequent ageing in used barrels.
Where it comes from
The grapes are grown in the area of Termeno, within the renowned wine region of Alto Adige. The vineyards are situated on mid-altitude hills at the foot of the mountains, in an environment that encourages consistent and regular ripening. The microclimate is characterised by significant temperature variations, with warm days influenced by the Mediterranean alternating with cool nights swept by Alpine winds, a combination essential for defining aromatic intensity. The vines sink their roots into calcareous soils with a clay and gravel texture, a geological composition crucial for giving the wine tasting precision and a solid structural framework.
How it is produced
Vinification begins with the destemming of the Cabernet Sauvignon grapes. The must undergoes temperature-controlled fermentation in steel containers, ensuring a balanced extraction of colour and aromas. At the same time, partial malolactic fermentation takes place, essential for giving the wine softness and roundness. Maturation takes place in used barrels, a stage that ensures a measured contribution of wood, enhancing the varietal expression without overpowering it.
