What kind of wine it is
Veritas Castel del Monte Bombino Nero Rosato is a still Apulian wine that expresses the unique characteristics of the Bombino Nero grape variety. In the glass, it displays a pale, bright pink hue, with an aromatic bouquet dominated by notes of strawberry and raspberry and hints of rose and violet. On the palate, it is balanced and fresh, with a pleasant savoury note that extends the fruity finish. It is ideal as an aperitif or paired with seafood risottos, grilled fish, and white meats.
Where it comes from
This oenological expression originates in Apulia, on the hills at the foot of the Castel del Monte castle, in the Corato area. The Torrevento estate, housed in a charming former Benedictine monastery, manages its vineyards following strict sustainable farming principles. The vines grow at an altitude between 400 and 500 metres above sea level, sinking their roots into calcareous-rocky soils of medium texture. This particular soil composition, combined with the temperature variations of the hills, gives the wine its characteristic clarity of flavour and encourages the development of varietal aromas, bringing the essence of the Apulian territory directly into the glass.
How it is produced
The harvest takes place between the end of September and the first days of October, carefully selecting bunches that have reached perfect ripeness. In the winery, the process begins with a gentle pressing of the grapes, followed by a brief maceration designed to extract only the most delicate colour nuances. The temperature-controlled fermentation takes place in stainless steel tanks, a material specifically chosen to preserve the aromatic profile and freshness of the fruit. The production process concludes with maturation in steel for four months, followed by a further period of rest that allows the wine to achieve its complete and rounded harmony of flavour.

Born within the walls of a charming former Benedictine monastery, where the Liantonio family has been operating since 1948, this wine represents a true oenological milestone. It magnificently celebrates Bombino Nero, the only Italian variety dedicated exclusively to the production of rosé wines. Under the expert guidance of oenologist Leonardo Palumbo, this label was the first in Italy to obtain the DOCG designation. The Torrevento winery embraces the principles of sustainable agriculture to cultivate its 57 hectares of vineyard, on the hills at the foot of Castel del Monte.

Vineyards are only grown with autochthonous vines, following the dictates of sustainable agriculture. At the winery, the production method follows a non-excessively long maceration time and a non-excessive use of wood. Francesco Liantonio has been at the helm; there have been many interventions: the expansion of the vineyard area, investments in technology and innovation and the start of the process for quality certification.
