Description
What type of wine it is
Torcicoda Primitivo by Tormaresca is an organic red wine with a Salento geographical indication, produced in Puglia from Primitivo grapes. It displays an intense ruby red colour and develops a bouquet of black cherry, blackberry, liquorice and vanilla, while on the palate it is broad, soft and balanced by a pleasant freshness. This unfiltered wine, whose vinification begins in steel and continues in wooden barrels, preserves its structure intact. Its long finish with sweet spices makes it perfect for accompanying roasts and savoury foods.
Where it comes from
This red wine originates at the Tenuta Maìme in San Pietro Vernotico, in the prestigious Salento area. The grapes come from old vineyards grown using the alberello (bush vine) and spurred cordon methods. The name pays homage to both an ancient agricultural tool used for horses and the historic vigour of the Primitivo vine shoots.
How it is produced
Processing begins in late August through de-stemming and soft pressing. The must ferments and macerates for about two weeks in stainless steel tanks at a controlled temperature below 28 degrees Celsius, using pump-overs and délestage to gradually extract colour and tannins. After malolactic fermentation, the wine is aged in French and Hungarian oak barrels, split between second-fill barriques and tonneaux. This process imparts elegant toasted notes before concluding with a final rest in the bottle, which ensures its perfect structural balance.
