Roycello Fiano Salento is a still white wine that enhances the characteristics of the Fiano grape variety. In the glass, it displays a straw yellow colour enriched with greenish highlights. Where it comes from
Produced by Tormaresca in Salento, this white is a faithful expression of the Mediterranean terroir. The proximity to the sea gives the grapes a distinctive saline imprint, typical of the coastal area. The climate encourages the development of a rich aromatic profile, dominated by bright citrus notes of orange blossom and orange, accompanied by hints of yellow peach and jasmine. A subtle trail of fresh almond completes the bouquet, offering an authentic and defined interpretation of the Apulian territory.
How it is produced
In the winery, the grapes undergo a gentle destemming and soft pressing. The must settles naturally at low temperatures to preserve the integrity of the primary aromas. Fermentation takes place in stainless steel tanks at a controlled temperature. This is followed by a targeted ageing on fine lees for several months, a fundamental step to enrich the wine's structure. A final resting period before release completes the wine's evolution, ensuring perfect balance and great expressive precision.
