Description

What kind of wine it is

Roycello Fiano Salento is a still white wine that enhances the characteristics of the Fiano grape variety. In the glass, it displays a straw yellow colour enriched with greenish highlights. The soft entry on the palate is immediately balanced by a pronounced savouriness and lively freshness. The notable mineral texture lends elegance to the sip, which finishes with a clean ending and a pleasant persistent creaminess, making it ideal for accompanying starters, shellfish, and fresh cheeses.

Where it comes from

Produced by Tormaresca in Salento, this white is a faithful expression of the Mediterranean terroir. The proximity to the sea gives the grapes a distinctive saline imprint, typical of the coastal area. The climate encourages the development of a rich aromatic profile, dominated by bright citrus notes of orange blossom and orange, accompanied by hints of yellow peach and jasmine. A subtle trail of fresh almond completes the bouquet, offering an authentic and defined interpretation of the Apulian territory.

How it is produced

In the winery, the grapes undergo a gentle destemming and soft pressing. The must settles naturally at low temperatures to preserve the integrity of the primary aromas. Fermentation takes place in stainless steel tanks at a controlled temperature. This is followed by a targeted ageing on fine lees for several months, a fundamental step to enrich the wine's structure. A final resting period before release completes the wine's evolution, ensuring perfect balance and great expressive precision.

Passion, courage and confidence in the immense potential Apulia has to offer in terms of quality are all elements that inspired the Antinori family to invest in this region, in particular in the Salento area.
