Where it comes from
The grapes come from the Masseria Maime estate of Tormaresca, located in Upper Salento. In this area of the region, the winery enhances the land by cultivating Chardonnay with great care. The Mediterranean climate gives the fruit a marked freshness, highlighting the area's pedoclimatic characteristics and the natural varietal expression.
How it is produced
The process begins with the manual harvesting of the bunches, followed by gentle pressing to obtain a clear must without damaging the berries. The must is cooled and kept at ten degrees for twenty-four hours, allowing for a natural cold clarification. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature to preserve the aromatic integrity. The wine completes its cycle with maturation in steel, a technical choice that preserves its fragrance and harmony.
