Made from a blend of Corvina, Rondinella and Corvinone, it displays a ruby colour with garnet highlights. Thanks to the ripasso technique, which involves a second fermentation on the Amarone grape skins, it gains body and depth of flavour. Its remarkable intensity is balanced by a lively freshness, making it easy to drink and leading to a persistent finish, marked by elegant spicy notes.
Where it comes from
This wine originates in Veneto, in the historic Valpolicella area. The grapes are grown in the Conca d’Oro vineyards, La Groletta and De Buris, areas that impart a strong territorial identity. The unique characteristics of the soils promote an excellent balance between the fruity component and balsamic hints. This natural synergy results in a smooth sip right through to the persistent finish, an authentic expression of its place of origin.
How it is produced
After the initial vinification, the process involves a second fermentation on the Amarone grape skins, followed by twelve months of ageing in Slavonian oak barrels. This period in wood refines a layered aromatic profile, characterised by notes of dried violets, sour cherry jam, cedarwood, tobacco, black pepper and sweet spices, all fused in a balsamic background. On the palate it is fresh and delicately savoury. This red pairs ideally with red meats, pork, veal, rich sauces and mature cheeses.
