How it is produced
The manual harvest precedes a gentle pressing of the whole grapes and static cold settling of the must. Alcoholic fermentation takes place in stainless steel tanks, avoiding malolactic fermentation to preserve the freshness of the aromas. The structure is defined by a prolonged ageing on fine lees for several months in steel at a controlled temperature.
