Description

What kind of wine it is

The Crémant de Limoux Brut from Domaine de La Baume is an elegant sparkling wine that faithfully expresses the terroir of Languedoc-Roussillon. This vegan wine is created from a harmonious blend of Chardonnay, Chenin Blanc and Pinot Noir. In the glass, it reveals a fine and creamy mousse, accompanied by a fresh bouquet of citrus and green apple. On the palate, clear hints of sweet almond, dried fruit and biscuit emerge, finishing with a clean and persistent finish with delicate toasted notes.

Where it comes from

The grapes are grown in Limoux, in the upper Aude valley, at the heart of Languedoc-Roussillon. The vineyards, situated about fifty metres above sea level, take root in clay and limestone soils ideal for viticulture. This area of southern France is constantly refreshed by ocean breezes. This climate encourages a slow ripening of the grapes, giving the Crémant de Limoux a vibrant natural freshness and ensuring impeccable balance on the palate, enhanced by a silky mousse.

How it is produced

Production strictly follows the Traditional Method, with the second fermentation in the bottle and a slow development of the mousse. Ageing on the lees for twelve months is essential to enrich the wine's aromatic complexity. The Brut dosage delivers a dry sip, characterised by juicy acidity well balanced by soft nuances. Modern and ready to drink, this sparkling wine is perfect as an aperitif and pairs excellently with oysters and raw seafood, including scallops and sashimi.
