How it is produced
The process begins with a rigorous manual harvest and selection. This is followed by a gentle whole-bunch pressing, while the must is clarified by natural sedimentation. Several months of ageing on the fine lees in steel is a key technical step to enrich the taste structure, while ensuring maximum definition of the fruity aromas.
