Description
What kind of wine it is
Torre Testa by Tenute Rubino is a still red wine from Apulia made from Susumaniello grapes, an expression of the Brindisi region. Its deep colour with violet highlights reveals a complex bouquet, where black cherry and plum blend with notes of chocolate and juniper. On the palate, a powerful and fragrant fruit emerges, balanced by a pronounced freshness. The structure rests on fine and vigorous tannins, which guide the sip towards a long finish.
Where it comes from
This red is born in Jaddico-Giancola, along the Brindisi coast. The vineyards, cultivated at sea level on sandy soils, give the grapes an intense aromatic component and excellent tannic definition. The influence of the Apulian terroir makes it ideal for accompanying structured first courses and grilled meats. Its harmony also magnificently enhances the complexity of mature cheeses, celebrating flavours such as those of Canestrato Pugliese.
How it is produced
Production begins in October with the manual harvest, followed by a drying of the bunches for several weeks. Fermentation takes place in steel at a controlled temperature, with a sixteen-day maceration to extract colour and aromas. The maturation process begins in steel and continues for at least a year in first-passage French oak barrels. This structured ageing concludes with a period of rest that shapes a balanced and harmonious sip.

Both the traditions of Salento and a vibrant entrepreneurial spirit have been passed down from Tommaso to his son, Luigi, who has since taken over with the support of his wife, Romina. Luigi has undertaken this entrepreneurial legacy, pouring all of his passion into the family’s winery and making it a global ambassador of Apulian viticulture.
After all, winemaking is an ancient art here in Jaddico: over the years, archaeologists have brought to light a Roman manor house filled with kilns, where Visellio—the owner of the estate—fired the amphorae used to export his wine to the four corners of the Roman Empire. At the time, this land was home to extensive vineyards and served as an important manufacturing center for wine containers.
