What kind of wine it is
Oltremé by Tenute Rubino is an organic rosé wine that captures the essence of Salento. Made from Susumaniello grapes, it stands out for its intense pink colour and a bouquet of cherry, raspberry and subtle spicy notes. On the palate, it reveals marked freshness and a distinct savoury note. Its good persistence makes it ideal paired with tuna tartare, marinated octopus and salmon risotto. Temperature-controlled vinification ensures precise aromatic clarity.
Where it comes from
The grapes come from the Jaddico Estate, located in the Brindisi area, in the heart of Salento. The vineyards, cultivated at sea level, are set on sandy and clay soils, ideal for giving the wine a fresh and savoury character. The vines are trained using the spur-pruned cordon method to ensure a balanced yield. Under the guidance of oenologist Luca Petrelli, production follows strict sustainable management, reflecting the commitment of a family-run business rooted in Apulia since the 1980s.
How it is produced
The production process begins with a manual harvest carried out in the first ten days of September. In the winery, fermentation takes place in stainless steel tanks at a controlled temperature, to preserve the delicate aromatic notes of the Susumaniello grape. This is followed by maturation in steel for four months, completed by a brief period of rest before release. This winemaking journey ensures a precise flavour profile, supported by well-integrated acidity that enhances the natural fruity aromas.

Both the traditions of Salento and a vibrant entrepreneurial spirit have been passed down from Tommaso to his son, Luigi, who has since taken over with the support of his wife, Romina. Luigi has undertaken this entrepreneurial legacy, pouring all of his passion into the family’s winery and making it a global ambassador of Apulian viticulture.
After all, winemaking is an ancient art here in Jaddico: over the years, archaeologists have brought to light a Roman manor house filled with kilns, where Visellio—the owner of the estate—fired the amphorae used to export his wine to the four corners of the Roman Empire. At the time, this land was home to extensive vineyards and served as an important manufacturing center for wine containers.
