Where it comes from
The grapes destined for this sparkling wine grow in the lush vineyards of Gibellina, located in the province of Trapani. The vines sink their roots into inland hills situated between two hundred and three hundred and fifty metres above sea level, on plots characterised by the typical Sicilian black soil. This specific terroir gives the grapes a pronounced natural acidity, fundamental for shaping the wine’s clear flavour profile and the sensation of freshness that define its style. The careful enhancement of this territorial context allows Tenute Orestiadi to achieve a faithful expression of the hilly landscape of Trapani.
How it is produced
The sparkling process relies on the Charmat Method, involving a carefully controlled fermentation in autoclave to preserve the aromatic integrity of the grapes. This technique encourages the development of elegant bubbles and enhances the fresh components of the must. Afterwards, the wine matures through ageing on the lees for three months, gaining greater structural stability. Before being ready for tasting, the sparkling wine undergoes a further rest in the bottle for at least three months, ensuring a dry texture, great aromatic clarity and a fresh, persistent finish.
