Where it comes from
The vineyards thrive on the hills of the Belìce Valley, in the Gibellina area, at an altitude between 350 and 500 metres above sea level. The environment benefits from a sunny and constantly breezy climate, where the dry microclimate encourages even ripening and preserves the aromatic precision of the grapes. The roots dig into unique white calcareous and chalky soils, derived from local formations that ensure excellent water retention. This geological composition transfers its distinctive mineral texture to the wine, defining its identity in a clear and precise way.
How it is produced
The winemaking process begins with a manual harvest, followed by careful destemming and soft pressing, essential for extracting a pure must. Fermentation takes place in temperature-controlled stainless steel tanks using selected yeasts. The wine then ages for three months in stainless steel, completing its journey with a final resting period of at least four months. It presents a bright straw-yellow colour, revealing an elegant freshness on the palate and a harmonious savouriness that fully respects the essence of Catarratto.
