Tenuta Ulisse pays rigorous attention to the region's premier grape variety, transferring the peculiarities of the local soil to the glass. Care in the vineyard translates into an intense ruby red colour and remarkable aromatic complexity. The result is a tasting with a defined territorial footprint, whose flavour architecture and deep structure make it ideal for accompanying rich and savoury culinary preparations.
How it is produced
The winemaking begins with maceration on the skins lasting ten to twelve days to ensure optimal colour extraction. This is followed by fermentation in temperature-controlled steel tanks. Subsequently, part of the mass matures in French and American oak barrels, gaining roundness without masking the fragrance of the fruit. Served at 16-18°C, preferably after a short decantation, it pairs beautifully with pasta dishes with sauce, savoury roasts and semi-matured cheeses.
