This wine originates from the fascinating area of Terre di Chieti, specifically in the municipality of Crecchio. Here, Tenuta Ulisse manages vineyards characterised by distinctive differences in exposure and soil composition. This microclimatic variety ensures a faithful expression of the grapes, enhancing the specificities of each individual plot. Careful agronomic management aims to highlight the identity of the territory, ensuring ideal ripening conditions. Thus, an authentic interpretation of Merlot comes to life, deeply linked to the climate of Abruzzo and its natural ecosystem.
How it is produced
The process begins with a rapid lowering of the temperature in a cooling tunnel, followed by careful cold skin cryomaceration. This delicate operation extracts and preserves the precious original aromatic compounds. After destemming and a twelve-hour maceration, a protected pressing is carried out in an inert environment. The white vinification of Merlot continues with slow fermentation at a controlled temperature in temperature-regulated tanks. Finally, three months of maturation in steel vats preserves the clear fragrance of the fruit intact.

Led by oenologist Antonio Ulisse, the company makes the most of the unique microclimates across its 70 hectares in the Terre di Chieti. This wine is made from Merlot grapes, a variety originally from the Gironde, which owes its name to the blackbird's fondness for its berries. Thanks to a particular white vinification process, the winery creates a refined expression, considered among the best rosés in Italy, skilfully blending the preservation of the ampelographic heritage with innovation.
