What kind of wine it is

Tenuta Ulisse Bianco Premium is a still wine with an intense and enveloping profile. This refined blend of white grapes harmoniously combines Bombino Bianco, Trebbiano d’Abruzzo, Cococciola, Passerina and Pecorino in a dry and well-structured sip. On the nose, it reveals elegant notes of white-fleshed fruit and citrus, enriched by delicate exotic hints. On the palate, a pronounced mineral freshness emerges, balanced by a vibrant acidity that leads to a long and persistent finish. It is the ideal companion for fish-based dishes, raw shellfish and creamy cheeses.

Where it comes from

This wine is produced in Crecchio, in the province of Chieti, by Tenuta Ulisse, a winery strongly committed to enhancing the Abruzzo region. The particular climatic conditions of the area positively influence the grapes, giving the wine a distinctive aromatic clarity. The careful selection of local varieties allows for an authentic expression of the regional landscape. This white wine faithfully reflects the characteristics of the terroir, blending significant olfactory intensity with a dynamic and pleasant sip.

How it is produced

After careful selection, the whole grapes undergo rapid cooling. This process favours skin cryomaceration, an essential technique for extracting the finest aromatic compounds. Destemming is followed by pressing in a protected environment and cold settling, before starting fermentation at a controlled temperature. Ageing in steel for three months, completed by a period of rest, allows the aromas to be sealed in and preserves the wine’s natural lively taste.

Wine making Harvest with selection and placement of whole grapes into the "Ulisse" cooling tunnel for rapid temperature reduction and subsequent skin cryomaceration to extract aromatic compounds. After destemming: crushing and direct pressing in an inert environment (0.7 bar) in stainless steel tanks; static cold settling at 14°C for 24–48 hours; slow fermentation in inerted stainless steel tanks at a controlled temperature (approximately 8–11°C). Ageing for 3 months in steel followed by further ageing in bottle.
