What kind of wine it is
Le Difese by Tenuta San Guido is an elegant still red wine from Tuscany, created from a meticulous blend of Cabernet Sauvignon and Sangiovese. Its aromatic profile opens with clear notes of blackberries, blueberries and violets, enriched by hints of oriental spices and delicate vegetal nuances. In the glass, it displays a bright ruby colour, heralding a smooth and composed sip, enlivened by precise freshness and finely polished tannins. Where it comes from
The vineyards take root in the area of Castagneto Carducci, in the heart of Tuscany. The vines grow at an altitude between one hundred and three hundred metres above sea level, benefiting from excellent south and south-west exposure that ensures consistent and optimal ripening of the grapes. The terrain is varied and composite, characterised by a strong presence of calcareous areas rich in marl and stones, alternating with significant clay components. This specific interaction between soil and climate gives the grapes a pronounced aromatic integrity and lays the foundation for an orderly tannic structure.
How it is produced
Production begins with a rigorous manual harvest, followed by selection of the bunches, destemming and gentle pressing. Fermentation takes place in steel vats at a controlled temperature thanks to the action of indigenous yeasts. This is followed by prolonged maceration on the skins, differentiated for each variety, during which pumping over and délestage are carried out to soften the polyphenolic component. After malolactic fermentation in steel, the wine rests for about eight months in oak barrels, a maturation that consolidates its overall harmony and prepares it for lasting evolution.
