What kind of wine it is
La Monaca Syrah by Sallier de la Tour is a still red wine that expresses the essence of the Monreale region. Made from Syrah grapes, it displays a deep ruby red colour. On the nose, it offers an intense bouquet dominated by blackberry, black cherry and balsamic notes, enriched by a strong spicy character and hints of liquorice. On the palate, it delivers a full and balanced sip, characterised by perfectly integrated tannins that lead to a persistent finish. This Sicilian wine is best enjoyed at the table with pork-based dishes and cheeses.
Where it comes from
The vineyards are located in the Monreale area, in western Sicily, cultivated at three hundred and fifty metres above sea level with a north-east exposure. The vines grow on sandy and clay soils, well-drained and well-aerated, capable of limiting vegetative vigour to encourage excellent aromatic concentration. The entire estate follows the principles of organic and sustainable agriculture, tending the espalier-trained rows with care for the ecosystem, in order to achieve balanced yields and respect the natural vocation of the land.
How it is produced
The harvest takes place in September, followed by traditional red fermentation at a controlled temperature for fifteen days. Afterwards, the wine completes malolactic fermentation, stabilising its structural harmony. The maturation period continues for fourteen months in French oak barrels, which define its olfactory complexity by imparting elegant vanilla nuances. To best appreciate its profound character, it is recommended to decant for one hour before serving in the glass.
