Cavallo delle Fate by Tasca d’Almerita is a dry white wine that faithfully reflects the Mediterranean character of its region. In the glass, it displays a bright straw yellow colour, hinting at a complex aromatic profile with notes of fresh fruit, citrus, and delicate floral nuances. On the palate, it offers a harmonious and balanced sip, characterised by a vibrant mineral freshness interwoven with hints of white-fleshed fruit and subtle herbal notes. Its excellent persistence makes it ideal for pairing with vegetarian starters, grilled fish, shellfish, and white meats.
Where it comes from
This white wine originates in Sicily at the Regaleali Estate, a historic property of Tasca d’Almerita. The Sicilian terroir fully enhances the potential of Grillo, an ancient island variety born from the crossing of Moscato and Catarratto, historically widespread in the Trapani area. Grown using Guyot and espalier training systems, the vines take root in an agricultural environment managed according to sustainable practices. To highlight the different expressions of this grape, the winery creates a careful blend of harvests, combining bunches picked early to preserve acidity with those harvested at a more advanced stage, which provide greater structure to the wine.
How it is produced
The vinification process focuses on enhancing the fruit through fermentation in stainless steel at a controlled temperature between 16 and 18 degrees Celsius, lasting fifteen days. This technique aims to preserve the integrity of the original aromas, ensuring a clear and precise expression. Afterwards, the wine undergoes ageing on the lees for four months, carried out entirely in the same vessels. This extended phase enriches the structure and broadens the taste consistency, providing lasting aromatic persistence while maintaining the natural liveliness of the variety.

Produced by the historic Tasca d’Almerita winery, founded in 1830, this wine is made from an ancient Sicilian variety grown in the Case Vecchie vineyard. The skilful blend harmoniously combines an early harvest, which imparts immediate mineral freshness, with a later harvest, ideal for giving an elegant structure. This captivating white, awarded 92 points by James Suckling, best expresses the island’s tradition of sustainable agriculture.

The Tasca family is internationally recognized for its pioneering role in modern Sicilian winemaking. Since 2001, Tasca d’Almerita has pursued a project focused on enhancing native grape varieties in the island’s most vocated territories. Alongside Regaleali—the historic estate spanning approximately 500 hectares—new estates have been added: Capofaro on the island of Salina, Tascante on the northern slopes of Mount Etna, Whitaker on the island of Mozia, and Sallier de La Tour in the Monreale DOC.
In 2019, Tasca d’Almerita was named "European Winery of the Year" by Wine Enthusiast magazine. In 2021, it became one of only 24 wineries worldwide to be awarded the prestigious "Green Emblem" for sustainability by Robert Parker – Wine Advocate. Since March 2023, already a Benefit Corporation, it has earned the esteemed international B Corp certification, joining a select group of companies committed to the highest standards of social and environmental sustainability. In 2025, Tasca d’Almerita received the "Historic Brand" recognition and was officially registered in the Special Register of Historic Brands of National Interest by the Italian Ministry of Enterprises and Made in Italy.
