Where it comes from

The grapes come from selected parcels within the prestigious Grand Cru villages of Oger and Le Mesnil. The soil features a light surface layer with natural grass cover, while the subsoil is characterised by a compact and slightly fractured chalk structure. These geological features give the Champagne a mineral imprint and high aromatic definition.

How it is produced

Vinification begins with a spontaneous fermentation triggered solely by indigenous yeasts. The base wine matures mainly in wooden barrels and is enriched, through a careful blend, with a perpetual reserve aged in partially filled barrels according to the solera technique. The completion of malolactic fermentation stabilises the flavour profile before the prise de mousse, as required by the Traditional Method. The Extra Brut dosage preserves the vibrant acidity of the fruit, delivering a cohesive sip that enhances the essence of the cuvée.

The domaine includes four hectares of Chardonnay divided equally between the legendary chalk terroirs of the Grand Cru villages Oger and Le Mesnil. The majority of the vines are between 40 and 60 years old. Stéphane has selected three parcels for his cuvées: Chemin de Flavigny in Oger, Moulin on the border between Oger and Le Mesnil, and Hautes-Mottes in Le Mesnil. These single-vineyard, multi-vintage wines harmonize the individual expression of the vineyard within the multivintage Champenois tradition.
