Description
What kind of wine it is
This Blanc de Blancs by Stephane Regnault is a true expression of its terroir. Crafted using the Traditional Method, the wine showcases pure Chardonnay, offering a refined and well-defined structure. The aromatic profile reveals notes of bread crust combined with clear fruity hints, introducing a dry and vibrant palate, characteristic of the Extra Brut dosage. Its overall balance makes it ideal for pairing with starters, fish dishes, and cheeses.
Where it comes from
The grapes are sourced from the renowned Grand Cru vineyards located in the villages of Oger and Le Mesnil-sur-Oger. The four hectares of vines, aged between forty and sixty years, are managed according to organic and sustainable principles. The plots, including Chemin de Flavigny, Moulin, and Hautes-Mottes, benefit from a favourable southern exposure within a gentle natural hollow. The soil is loamy and well-structured, characterised by a fine and crumbly earth where clover-based grassing encourages the natural development of the vine.
How it is produced
In the winery, a non-interventionist vinification approach is adopted to respect the integrity of the raw material. Each plot is vinified separately, dividing fermentation between stainless steel tanks and used barrels. The creation of the wine involves the integration of a perpetual reserve, resulting in a harmonious and consistent blend. The entire process concludes with malolactic fermentation, which gives stability to the organoleptic profile without compromising the vertical tension and bold character typical of Champagne.
History and Curiosities
Dorien No. 80 by Stephane Regnault Champagne is crafted from fine Chardonnay grapes grown in the Grand Cru vineyards of Oger and Le Mesnil-sur-Oger. The historic vines thrive in a sunny, south-facing hollow, on fine and friable soil managed according to strict organic and sustainable principles. Meticulous non-interventionist vinification is carried out using both steel and wood, completed by malolactic fermentation and the use of a perpetual reserve. The result is an Extra Brut Traditional Method capable of offering a sensory experience of rare excellence and purity.
