What kind of wine it is

L’Ovest by Sorelle Bronca is a Valdobbiadene Prosecco Superiore made from a blend of Glera, Perera and Bianchetta grapes. In the glass, it displays a straw yellow colour with greenish highlights, enhanced by a very fine and persistent perlage. On the nose, it releases complex aromas of white fruit, enriched by delicate floral notes of acacia and wisteria. The Extra Dry dosage offers an elegant and joyful sip, where lively freshness harmoniously blends with the residual sugar, giving the wine remarkable depth of flavour.

Where it comes from

This sparkling wine is produced in the heart of Veneto, within the Valdobbiadene Prosecco Superiore area, among the hills of Col San Martino, Colbertaldo and Farrò. The estate’s vineyards are managed following a strict ecological and biodynamic approach, excluding the use of chemical fertilisers and artificial irrigation. Among the rows, trained using the traditional capovolto system, the grass is allowed to grow spontaneously to preserve biodiversity. The exclusively manual harvest ensures meticulous selection of the bunches, capable of conveying the authentic expression of the terroir into the glass.

How it is produced

The cellar process begins with gentle pressing of the whole grapes. The first fermentation in steel tanks occurs spontaneously thanks to the action of indigenous yeasts. Subsequently, the prise de mousse follows the Charmat-Martinotti method, with a period on the lees lasting at least four months. This artisanal technique enhances the primary fruit aromas, ensuring a lively and extremely fine mousse and an overall structure of impeccable balance.

Hence the fundamental role of research for us understood not only as a way of moving forward but also as an exaltation of what is different by nature, analyzing it in-depth, and questioning each of its aspects as part of a much more complex whole.

The experimentation of new natural preparations for the defense of the vine, the adoption of the modern vision of an ancient technique such as the association between different plant species, the study of spontaneous fermentation is just some of the elementary particles that make up the wine of our cellar.
