Particella 232 Extra Brut Prosecco Superiore Valdobbiadene by Sorelle Bronca is a sparkling wine produced using the Charmat Method. Created from a blend of Glera, Verdisio, Bianchetta and Perera, this Conegliano Valdobbiadene Prosecco displays a straw yellow colour with bright green highlights. The aromatic bouquet combines white peach, almond blossom and melon with delicate mineral notes. On the palate, it is savoury and vibrant, enlivened by an elegant and creamy perlage that perfectly balances the pronounced acidity. Its defined structure makes it ideal to pair with raw fish dishes, fresh cheeses and sushi.

Where it comes from

This wine originates in Valdobbiadene, from the vineyards of Colbertaldo di Vidor located near the renowned Cartizze area, within the Rive di Farro zone. The grapes come from the steepest and most suitable slopes, cultivated with a focus on sustainability in a single plot to enhance the authentic expression of the terroir. Altitude plays a fundamental role, ensuring deep floral aromas and a marked acidity. These natural elements give the sip a slender, dynamic and extremely precise profile.

How it is produced

Production begins with a rigorous manual harvest, essential to preserve the integrity of the bunches. The prise de mousse takes place in a pressurised tank, a technique that ensures a fine and persistent effervescence. The vinification process includes the addition of a portion of reserve wine from the Particella 68 vineyard, a choice that enhances its intensity and stylistic consistency. Capable of evolving positively for several years, this sparkling wine expresses its lively freshness and mineral savouriness at its best when served between six and eight degrees.

Particella 232 originates from a steep and rugged plot in Colbertaldo di Vidor, just a stone's throw from the renowned Cartizze. Hence the fundamental role of research for us understood not only as a way of moving forward but also as an exaltation of what is different by nature, analyzing it in-depth, and questioning each of its aspects as part of a much more complex whole.

The experimentation of new natural preparations for the defense of the vine, the adoption of the modern vision of an ancient technique such as the association between different plant species, the study of spontaneous fermentation is just some of the elementary particles that make up the wine of our cellar.
