Where it comes from

The vineyards benefit from their proximity to the sea, a characteristic that flows into the glass with a marked iodised trail. How it is produced
The early harvest at the beginning of September preserves the natural acidic tension of the grapes. In the cellar, the process involves a soft pressing of the bunches and cold static decanting. The first fermentation in stainless steel excludes malolactic fermentation to maintain freshness. The second fermentation in the bottle follows the principles of the Traditional Method, completed by a targeted ageing on the lees in steel.
