How it is produced
Production begins with destemming and gentle pressing, followed by static cold settling of the must. Fermentation in new French oak barrels gives the wine, from the very first stages, a significant structure. This is followed by maturation for about eight months, partly in steel tanks and partly in second and third passage barrels. This choice allows the integration of primary aromas with greater gustatory complexity. To best appreciate its harmony, a serving temperature of 12-14 °C is recommended.
