Where it comes from
The Sassoregale vineyards grow in Civitella Paganico, in the heart of the Maremma Toscana. Located in the province of Grosseto, along the eastern edge of the Ombrone river plain, the vines benefit from a bright and constantly breezy area, with altitudes ranging from 12 to 70 metres. The medium-textured soils with clay ensure proper vegetative development, imparting the structure and concentration typical of this renowned area of the Tyrrhenian coast.
How it is produced
Harvested at full ripeness, the grapes undergo gentle crushing and destemming. The must undergoes temperature-controlled fermentation in steel tanks, accompanied by targeted maceration on the skins. Pumping over and délestage operations optimise the extraction of structural components. The process concludes with ageing for about 18 months in French oak barrels, a crucial step to enhance the aromatic complexity and refine the tannic structure.
