Description

What kind of wine it is

Stefano Antonucci Animale Celeste Bianco Dry Zero Alcohol is a non-alcoholic offering from the Santa Barbara winery. In the glass, it stands out for its straw yellow colour enlivened by bright greenish reflections. The bouquet is intense and clear, with notes of ripe peach blending with elegant vegetal nuances of green pepper, sage and geranium. On the palate, it reveals a well-balanced structure, where pleasant softness meets vibrant and satisfying freshness. The sip is persistent and finishes with an excellent clean finish, ideal for a light and refreshing drink.

Where it comes from

The grapes are grown among the hills of the Marche region, where the vineyards are situated at around three hundred and fifty metres above sea level. The area is characterised by a medium-textured soil with a significant and valuable calcareous component. This specific geological matrix is essential for giving the wine tension and order, preserving the natural freshness of the fruit until full ripeness. Careful agronomic management enhances the regional identity through a lean sensory profile, faithfully reflecting the characteristics of its place of origin.

How it is produced

Harvesting takes place between the end of September and the beginning of October, followed by vinification in stainless steel designed to maintain the original fragrance of the fruit. The production process uses advanced dealcoholisation by direct osmosis: a membrane technology that physically separates the alcohol without the use of chemical additives. This delicate technique ensures a sensory experience consistent with the primary aromas. At the table, it elegantly accompanies dishes based on lean fish and selections of fresh cheeses.

History and Curiosities

Founded in 1984 in the Marche region, the Santa Barbara winery presents the innovative Animale Celeste Bianco Dry Zero Alcohol. Overseen by oenologist Pierluigi Lorenzetti, this product originates from vineyards situated at 350 metres above sea level on limestone soils. The absence of alcohol is ensured by advanced dealcoholisation by direct osmosis, a delicate membrane technique that does not involve the use of chemicals. After fermentation in steel, the method preserves the aromas, offering a harmonious sip for a completely alcohol-free experience.

The name Santa Barbara pays homage to our land, our tradition and those we worship. The history of this place dates back to the 6th century when Senigallia was a Byzantine city and a Lombardic (and therefore "barbarian") outpost was
set up in a nearby village. Since then, that village took the name of Barbara which is where our winery is located today, having the privilege of being housed in an old monastery.

Our winery is located 25 km from the Adriatic Sea and is located on the hills that run between the Misa and Nevola rivers. Here a team of professionals works in the winery and vineyards every day, fuelled by passion, determination and a pinch of creativity so that our grapes maintain their beauty and express the quality of our land.
